Since 2022, Chef Christophe Hay has been chef of Restaurant Christophe Hay and general manager of Fleur de Loire. Two posts define his current work in Blois: chef of the restaurant, and since 2022, general manager of Fleur de Loire. Hay has described the intent without decoration: “The main idea was above all to build a friendly place – a real home.” He has also explained why Blois remains central to that work: “Chefs usually leave the city to settle in the countryside; I chose to do the opposite, because this very city saw me grow professionally.”

The Loire and Sologne menu anchors the signature in geography rather than abstraction. In Christophe Hay’s case, the naming keeps the focus on region as a culinary register, with the menu reading as an extension of the place that has shaped his practice.
