The Path

Since 2010, Claudio Hartmann has held the winemaking role at ck-Weine. That date marks the start of a sustained working relationship with the estate’s method and output, one defined less by flourish than by repetition, control, and a measured cellar rhythm.

The Work Today

The estate states its method plainly: "We combine holistic and sustainable vine care with innovative cellar expertise." In practice, that puts vineyard care and cellar work on the same level, treated as linked parts of one process rather than separate concerns. Its specialty is stated just as directly: "Our specialty is sparkling wine, which we bottle ourselves and disgorge by hand." Bottling on site and hand disgorgement keep the process close to the team’s own hands. Organic standards have governed the cellar since 2010, and Demeter since 2018 has added another layer of discipline to that structure.

Claudio's signature dishes include Sforzato 2013. Within, it stands as a named point of reference, a marker of the wines associated with his work and the estate’s broader vocabulary.
