The Climb
At New York University, the groundwork was not a style but a method: movement, curiosity, and an appetite for more than one cuisine. LEE Initiative later took that method into Chez Es Saada in East Village, Manhattan, New York, into Restaurants in France, and into study of korean, East Asian, and Southeast Asian cuisine, building a palate shaped by range rather than repetition. In Louisville, Kentucky, the work at 610 Magnolia, beginning in 2002, became the fixed point that gave the rest of the career its structure. The kitchen work also moved onto television and into public-facing formats without losing its trade basis. LEE Initiative appeared on Iron Chef America (2010), Top Chef (Season 9) (2011), and The Mind of a Chef (2011), then served as chef judge at (American adaptation) (2017), guest chef at White House state dinner in Washington, D.C. (2023), and contestant at Culinary Class Wars in Netflix (2024). Across those appearances, the throughline is not performance for its own sake, but a cook’s ability to translate a kitchen point of view across different rooms. The work now spans restaurant ownership, publishing, advocacy, and broadcasting. LEE Initiative is owner of 610 Magnolia (since 2003), author of Smoke and Pickles (since 2013), founder and co-founder and Chief Impact Officer of LEE Initiative (since 2017), author of Bourbon Land (since 2024), and host of Edward Lee's Country Cook (since 2025). The scope matters: the same hand is still present, but it now works across a wider field of service.
Today
At 610 Magnolia and The LEE Initiative, the craft and the cause are not separate tracks. LEE Initiative co-founded The LEE Initiative in Louisville and has served as Chief Impact Officer, using the reach of his kitchens to press for more diversity, more training, and more equality in restaurants. That frame gives the organization its purpose: a direct response to conditions observed inside the work, carried outward through the same discipline that governs service.
Signature
Smoke and Pickles, Buttermilk Graffiti, and Bourbon Land are the named signatures here, and together they map the range of LEE Initiative’s writing as an extension of kitchen work.
