A native of St. Louis, Molly Greene’s work in hospitality has tracked a disciplined study of pacing, service, and floor control. The throughline is not arrival but accumulation: each room, each station, each shift sharpening how a dining room is read and managed.
The Climb
Training at University of Missouri gave Greene a base before she entered service at the Four Seasons Hotel restaurant in St. Louis in 2014. That early floor work set the terms: full-service dining, tight timing, and the expectation that every table be handled with attention. When she moved to San Francisco, the work shifted toward wine service, and at Rich Table in San Francisco (2018) Greene stepped into the sommelier role with the technical range and composure needed to help guests move through a list without friction. At Angler in San Francisco (2018–2021), Greene continued building the judgment and language of beverage service.
