Indian restaurant work in Midtown Manhattan required both cultural clarity and commercial discipline. In 1979, Chatwal opened Bombay Palace in Midtown Manhattan, New York, USA. Its position in New York made the restaurant part of a larger trade question: how Indian cuisine is presented, staffed, and operated for an international urban audience. Hotel group leadership shifts the craft from a single property to standards, positioning, and repeatable execution across a portfolio. Chatwal served as chairman and Chief Executive Officer of Hampshire Hotels & Resorts until 2015, a role concerned with hospitality strategy as much as daily operations. Board-level hospitality work is concerned with direction, continuity, and brand stewardship. Since 2015, Chatwal has served as chair of the board of Dream Hotel Group, maintaining a role in the group’s strategic direction.
