Cellar work is built on repetition, timing, and judgment, and Achim von Oetinger’s training was shaped by that discipline from the start. At Rheinhessen winemaking training, he gained the practical grounding that structured his understanding of wine and set the terms of the work that followed.

The Work Today

Cellarmaster work keeps the cellar at the center of daily decision-making, and Achim von Oetinger occupies that position at the estate. The role requires attention across the practical demands of cellar operations and the shaping of the wines’ final character. Riesling is a central focus in that work, and it runs through the choices he makes and the direction he pursues. The result is a hands-on practice tied closely to the estate’s identity, with each cellar decision carrying weight in the wines that emerge. Achim's signature dishes include Riesling «Hohenrain» Grosses Gewächs, Marcobrunn, Siegelsberg, Hohenrain, and ERBACHER HOHENRAIN RIESLING.
