The Path
Technique is the throughline in Adam Leonti’s training and early kitchen work. Walnut Hill College, Restaurant School gave the fundamentals a place to settle before the head-chef role at Vetri in Philadelphia (2011–2014), where repetition and precision became part of the daily register. That period established the disciplined culinary voice associated with Leonti: one built on control, consistency, and a clear reading of dough, heat, and timing.
The Work Today
Bread and Italian cuisine sit at the center of the work, and the pairing makes sense on technical grounds: flour, water, olive oil, polenta, and semolina form the vocabulary.
