i. Biography
Since 2009, Jambo Café in Santa Fe, New Mexico has been shaped by Kenyan island food under Ahmed Obo, whose cooking keeps home-style warmth close to the plate. The restaurant’s center of gravity is not spectacle but continuity: a kitchen where memory, comfort, and technique are worked into the same line of service.
The Climb
A first professional kitchen at Zia Diner in Santa Fe, New Mexico gave Ahmed Obo his starting rhythm as a chef. From that point, the work moved with steady accumulation rather than abrupt reinvention, drawing on family cooking and personal history while adapting to the pace and discipline of restaurant service. The result was a kitchen voice that developed through repetition, not display. Continuity is the thread running through Ahmed Obo’s later posts: owner-chef of Jambo Cafe since 2009 and chef and owner of Jambo Bobcat Bite since 2023. Those roles mark a career built around ownership and daily responsibility, with the same food identity carried across both addresses.
Today
Jambo Café remains the primary expression of the work, now alongside the second restaurant. That split speaks to a practice grounded in consistency and audience, with the local diners named plainly by Ahmed Obo himself: “My target is the local people who have embraced me.” It is a working relationship based on familiarity, not novelty.
Signature
Ahmed’s signature dishes include coconut pili pili shrimp, Lamu coconut tempura shrimp, and Roast Beet and Ginger Coconut Bisque. The through-line is clear: coconut, spice, and root-driven sweetness arranged for contrast rather than excess. Taken together, the dishes show a kitchen that works with brightness, warmth, and a measured hand.
In Their Words “I grew up cooking with my mom.”
Recognition
Ahmed Obo has received James Beard Awards, Best Chef in the Southwest (2022). Family cooking sits behind the menu in direct, practical ways. “I grew up cooking with my mom.” That kind of early kitchen education often shows up later not as nostalgia, but as muscle memory: how seasoning is judged, how a plate is composed, how food is meant to meet the table. In Ahmed Obo’s case, the personal background is not separate from the restaurant work; it is part of the method.
