Cellar practice at Freeman Vineyard & Winery is kept intentionally plain. Akiko Freeman describes the approach as very traditional, with natural yeast, and wines that are left unfiltered and unfined.

Akiko's signature wines include Akiko’s Cuvee, 2022 Akiko’s Cuvée Pinot Noir, 2021 Akiko's Cuvee West Sonoma Coast Pinot Noir, 2022 Ryo-Fu West Sonoma Coast Chardonnay, and Sonoma Coast Pinot Noir.
