The Path
ElBulli in Roses, Catalonia, Spain, set the terms of Albert Raurich’s craft early: rarefied discipline, pressure-tested precision, and a kitchen language that treated rigor and surprise as compatible tools. From 1997–2007, he held head-chef responsibility there, and that span gave his work its structural grammar. The move from Roses to Barcelona later shifted the setting, but not the discipline; the line back to that formative kitchen remained visible in the way his cooking organized itself.
The Work Today
At Dos Palillos, the work reads through small plates, sequencing, and an Asian sensibility that depends on rhythm as much as composition. The kitchen’s point of view is measured rather than declarative: one plate follows another, and the meal builds through cadence instead of a single centerline. That approach has been described as the best Asian restaurant outside Asia and the most important Asian restaurant outside of Asia, language that tracks the reach of the restaurant as much as the specificity of its format. The tapas comparison is central because it explains the structure without forcing the style. “A lot of people think that tapas are ours, but when I went to Asia and noticed the way Chinese made and ate dim sum, and the way plates were served, it was just like our tapas,” Raurich has said. Read as craft, the point is not analogy for its own sake, but a shared architecture of eating: small units, ordered arrival, and a meal built in sequence.
