i. Biography
In 2015, Alex Ong was consulting at Chubby Noodle North Beach in San Francisco after a long run through hotel kitchens and a defining 2001–2013 tenure as chef at Betelnut Restaurant. The route was not preplanned. It started in Malaysia, in the workaday rhythm of a hotel kitchen, after time on the dining room side at the Shangri-la Hotel in KL. Ong’s own account is plain: “It was never planned. I was working as a part time waiter at the Shangri-la Hotel in KL and thought that the cooks in their white coats and hats looked good and talked my way in.” That move, from waiter to line cook, set a pattern of advancement by proximity, repetition, and earned access.
The Path
Hotel kitchens formed the base of Ong’s training: controlled stations, strict timing, and the kind of pace that leaves little room for drift. He worked as chef de partie at Fairmont Southampton Princess Hotel in Bermuda, then as cook at Shangri-la Hotel, and later as chef tournant at Caesar's Tahoe. Each post added range without breaking continuity, building a career across different houses and formats. The longest stretch came at Betelnut Restaurant in San Francisco, California, where Ong served as chef from 2001–2013 and helped set the restaurant’s identity over more than a decade. In 2015, he returned in a consulting role at Chubby Noodle North Beach in San Francisco, California, and today Alex is director of culinary excellence of University of Massachusetts-Amherst Dining Services.
