Born on 15 March 1991 and French-Swiss, Amaury Guichon works in the branch of pastry where chocolate, sugar, cream, and structure are asked to carry illusion as well as flavor. The objects are readable before they are eaten: a watch, an egg, a compass, or a signature decadent chocolate clock pastry with delicate gears. The craft problem is precision under fragility—surface, balance, concealment, and finish held tightly enough that the piece can be understood as both object and dessert.
