Andrew Knowlton spent nearly two decades at Bon Appétit, where restaurant coverage was shaped from the editor’s desk and carried by the standards of a reviewer used to moving through dining rooms with restraint. From 2000 to 2018, as restaurant editor at Bon Appétit magazine, he treated criticism as reporting: watch the room, read the plate, keep the language clear, and let judgment do its work. His own line—“I always attempt to go to restaurant anonymously”—gets at the method. So does the other one: “I was in love…with the Waffle House.” Together, they point to a critic who could handle the polished end of dining without losing sight of the everyday places that teach as much about American eating as any tasting menu.

Training at Bates College and New York University gave Andrew Knowlton the academic footing for a career built on scrutiny, editing, and range. That background matters less as polish than as practice: the ability to move between the classroom and the dining room, then into the pressure of public food criticism, without dropping the standard.
