i. Biography
Andrey Ivanov earned the Court of Master Sommeliers Master Sommelier Diploma in 2018, a formal mark that followed years in service and did not replace them. At Saint Louis University, he built the base that came before the floor, the tickets, and the pace of dining room work; what followed was a career shaped by repetition, timing, and the exacting language of hospitality.
The Path
In kitchens, progression is often measured by the rooms you can hold steady under pressure. At Patara (Ginza Project restaurant group) in Moscow, Andrey Ivanov started building the instincts that service demands: timing, composure, and consistency. Rybtorg, Bruxelles (later BRUXX), and the next steps each added another layer to that discipline, widening his sense of pace and sharpening the collaborative habits that keep a line moving. The sequence continued through Ketch Up in St. Petersburg, Restaurant No. 13, and Balagan in Moscow, a run of posts that shows accumulation rather than detour. Each kitchen added its own tempo and expectations, and together they broadened the range of practice behind his work: more exposure, steadier judgment, and the kind of confidence that comes from being tested repeatedly in professional service. Leadership in a kitchen asks for more than technical fluency; it asks for coordination, consistency, and the ability to turn experience into routine that others can rely on. As Sous chef at Severnyane, Andrey Ivanov would have carried those responsibilities into a more senior frame, extending the same discipline that marked the earlier stages of his career. The through line is steady progression through increasingly consequential roles, built on adaptability and sustained momentum. Since 2025, Andrey has been Head Chef of NOA (Not Only Aesthetic), where that accumulation of work has become a lead position. After the succession of kitchens in Moscow and St. Petersburg, NOA (Not Only Aesthetic) is the point where his experience turns into direction.
