Career Arc
Hospitality training can start in classrooms as much as in service. At Sheffield Hallam University, Andy Swinscoe built the formal base for work that would move through hotels and into cheese retail, affinage, and farmhouse supply. Early posts at Family's Country-House Hotel and The Balmoral Hotel put service, handling, and guest-facing discipline before any later specialization. Cheese retail became the primary craft in 2012, when Andy Swinscoe became owner of The Courtyard Dairy in Settle, North Yorkshire. The work centered on artisanal cheese, with the shop becoming the place where selection, care, and customer instruction met the needs of serious cheese buyers. “We want to support traditional farmhouse cheesemakers and encourage others to diversify into cheesemaking: making cheese on their own farm, using their own herd, using traditional practices.” Andy has said.
The Practice Today
Unpasteurised, raw milk cheese from single herds requires a retail model that treats sourcing, condition, and explanation as one trade. Since 2012, Andy Swinscoe has worked at the dairy as owner, affineur, and cheesemaker, with the shop focused on cheeses that carry farm identity rather than anonymous volume. His work also extends into international cheese judging and independent scholarship. Support for traditional farmhouse cheesemakers is built into the buying and aging practice at the dairy. In Andy Swinscoe’s hands, the shop functions as both retailer and maturing space, selecting cheeses from small farms and aging cheese on-site in a specially equipped shop.
Credentials
Trade recognition has followed the retail, affinage, and farmhouse-cheese work. Andy Swinscoe received the Food Hero Award in 2025, was named Retailer of the Year in 2020, and was honored as Cheesemonger of the Year in 2013. Taken together, the honors mark contribution across sourcing, service, and specialist cheese knowledge.
