From there, Catalina Rose Bay (1995–2007) gave the work a longer frame: Executive Chef duties over more than a decade, with the steady leadership required to keep standards intact service after service. The progression through Rockpool Group (2007–2013) and Rosetta Ristorante (2012–2018) shows a chef working comfortably at scale, with exacting standards held across different rooms and different pressures.
