The Path
At The Lobster Club in New York City, at Inside as chef and co-owner, and later at Arcadia in New York City as Executive Chef and co-owner, Anne Rosenzweig built a line of work around market-driven cooking and a willingness to let technique travel across cuisines. The throughline is not ornament but selection: what the market sends, what the kitchen can do with it, and how far a dish can go without losing its center. Her own framing is direct: “In my travels I have always been influenced by techniques and flavors.” That shows up in the way cardamom can enter a plate without tipping it into curry, and in a cooking style that treats contrast as part of the structure rather than a break from it.
The Work Today
At Arcadia in New York City, Anne Rosenzweig’s cooking starts with the market’s daily report: corn, herbs, cream, caviar, and whatever else arrived with the morning’s best promises. The plate is built with restraint, each element set where it belongs rather than pushed into display. Greenmarket-driven cuisine became the restaurant’s operating logic under her direction, and the menu reflects that discipline. Corncakes with gold and black caviar, crème fraîche, and chives hold the line between earthiness and luxury, while chocolate bread pudding adds weight and darkness at the end of the meal. Rosenzweig has said, “I like to put things together on inspiration.”
Signature
Anne's signature dishes include Corncakes with gold and black caviar, Roast boned quail, Chocolate bread pudding, and Best Brussels Sprouts.
In Their Words “I might use a spice that is common in Indian cooking - cardamom, for example - but the dish does not turn out to be a curry.” “In my travels I have always been influenced by techniques and flavors.”
