Since 2017, Domaine Arnaud Baillot has been owned and made by Arnaud Baillot, a role built for Burgundian work that depends on close observation rather than force. Burgundy asks for parcel-level judgment: each site carries its own cadence, and the job is to track what the vineyard gives, then guide it with restraint in the cellar.
