That same logic shows up across the kitchens and appointments that shaped his early career: the work at Chez Mélange in Redondo Beach, the move to Marenna at Feudi di San Gregorio in Avellino, Italy, the private-household pace of cooking for Will and Jada Pinkett-Smith, and the restaurant years at Grace in Los Angeles.
