Aymeric Hillaire’s work at Domaine Mélaric is anchored in the discipline of the Agronomic School of Montpellier. That training set the terms of his approach: method over noise, observation over impulse, and a steady hand on the practical demands of winegrowing and winemaking. In 2006, Domaine Mélaric in Saumur Puy-Notre-Dame, France was launched with Aymeric Hillaire as co-founder and winemaker.
