Classical French kitchen training is built on repetition, restraint, heat, timing, and judgment under service pressure. The kitchen-hand station teaches professional cooking before authorship: how flavor is prepared before the dining room sees it, how pace is kept, and how consistency is protected through stocks, sauces, trussing, trimming, and service rhythm. From 1962 onward, Pacaud’s formation came through that proximity to disciplined classical French craft. The second-chef role asks for more than execution; it requires anticipation, steadiness, and alignment with the chef’s intention. At La Coquille (from 1973), Pacaud moved into that responsibility, then became chef under Claude Peyrot at Vivarois, continuing a line of work defined by refinement of technique, taste, and command rather than abrupt reinvention. A first address gives accumulated technique a fixed frame. In 1981, Bernard became founder / chef at Ambroisie in rue de Bièvre, 5th arrondissement, Paris, France (from 1981). The cooking there drew on classical discipline, controlled execution, and measured elegance rather than excess. Continuity matters in houses where the plate is governed by balance and control. Today, Bernard is owner-chef of L'Ambroisie (since 1986), carrying forward the same exacting language from the early Ambroisie chapter into the mature Paris address. “Look what gastronomy has become!” Bernard has said.

Honors
