i. Biography
Rutgers University gave him the academic base for that work; That mix of rigor and curiosity runs through a career that moved from ambitious kitchens to a national platform.
Coming Up
Bill Yosses trained at New York City College of Technology, University of Toledo, and Rutgers University, building the practical and intellectual range pastry asks for. He then trained in France under chefs Gaston Lenôtre and Pierre Hermé at France, a formative stretch grounded in exacting method and disciplined pastry culture. Back in New York City, he worked at Citarella in New York City and Josephs in New York City before moving into a series of pastry chef roles that widened both his reputation and his range. At Bouley and Montrachet in New York City, he served as pastry chef, then continued as pastry chef at Polo in New York City and pastry chef at Tavern on the Green in New York City. Each post added another layer to a career built on refinement, composure, and desserts that could read elegant without tipping into excess. By 2007–2014, that work reached a national stage when he served as White House Executive Pastry Chef at The White House in Washington, D.C, where pastry decisions carried unusual visibility. Later, Yosses returned to New York City as pastry chef at The Four Seasons Restaurant in New York City (2018–2019), before becoming owner at Perfect Pie in New York City (until 2020).
Where They Are Now
The national chapter came with his service as White House Executive Pastry Chef at The White House in Washington, D.C. That appointment remains the clearest public marker of his career, but it sits inside a longer record: a pastry chef repeatedly working through balance, flavor, and form. Today he works as a Baking & Pastry Consultant, and he is also the Owner of Perfect Pie in New York City and the Founder of Kitchen Garden Laboratory, carrying the same interest in healthier desserts into separate ventures. The thread is consistent—desserts that keep pleasure in view while reworking how that pleasure is built.
Signature
Bill's signature dishes include Desserts For Dummies, The Sweet Spot: Dialing Back Sugar and Amping Up Flavor, The Perfect Finish: Special Desserts for Every Occasion, Vanilla Cupcakes with Lemon Cream and Raspberries, and Halvah-Sesame Sundae. Together, they point to a pastry mind that values clarity as much as flourish, and desserts that can be comforting without losing structure.
In Their Words “My name is Bill Yosses, and my cookbook is called The Sweet Spot: Dialing Back Sugar and Amping Up Flavor.”
Honors
The White House appointment remains the clearest public distinction in his career, alongside the New York City work that kept his pastry focus in view. It marks a level of trust as much as recognition: desserts made to represent polish and restraint at the highest level.
