The Climb
Blaine Wetzel’s career moved through kitchens of very different scale and pressure, with each post tightening the same basic concern: how place shapes cooking. He worked as chef at a steakhouse next to a Walmart, then at Alex in Las Vegas, then as chef at La Berge Carmel in California and chef at Manresa in California. The sequence then narrowed at Noma in Copenhagen, where he worked as chef de partie, before he went on to The Willows Inn on Lummi Island, Washington, where he served as head chef from 2010–2022 and co-owner there until 2022. The throughline is control, but not the ornamental kind. Wetzel’s progression suggests a cook refining how to read an environment rather than imposing a fixed style on it. By the time he reached The Willows Inn on Lummi Island, Washington, the link between kitchen and landscape was already built into the work.
Today
That approach stays anchored in the Pacific Northwest, where seasonality and local product set the pace. He has said, "The Pacific Northwest offers an abundance of beautiful ingredients that shape the way we cook." The point is direct: the region supplies the terms, and the kitchen works within them. He has described the method in equally plain language: "Whether it’s wild salmon, our garden's cherry blossoms, or the first nettles of the season, we just try to showcase that particular item." The emphasis is on restraint and specificity. Each ingredient is treated as its own subject, not as material for camouflage.
