The Climb
At South End in New Canaan, Connecticut, the work started with fundamentals, then tightened through repetition at Community Table in Washington, Connecticut (2016–2023), where the sous chef role put Bolivar Hilario inside the daily discipline of a serious line. From there, the route moved across a set of kitchens with distinct tempos: chef at Chumley’s in New York, New York, chef at The Musket Room in New York, New York, chef at Shoji in New York, New York, chef at SWYFT in Litchfield County, Connecticut, and chef at Ore Hill in Litchfield County, Connecticut. That progression reads as accumulation in the practical sense: more rooms, more service rhythms, more chances to turn instinct into something stable enough to carry a dining room.
