Early in Brendan Carter’s career, a stint in the wine industry at Veuve Clicquot set a practical baseline for what came next. That kind of early immersion tends to shape the ear for wine, the pace of service, and the understanding that craft and character sit alongside polish. Since 2012, Brendan has been co-founder and winemaker of Unico Zelo and co-founder of Applewood Distillery, two businesses built with a clear sense of their own voice.
