Restaurant craft is often built by sequence rather than revelation: fundamentals, repetition, line pressure, opening-team work, management, ownership. In Brian Lea’s case, that sequence runs from California beginnings through disciplined stations and leadership roles to Nashville, where he is co-chef and co-owner of Kisser. The record is cumulative: prep work, line-cook speed, sous-chef pressure, Chef de cuisine accountability, and the broader judgment required of an executive chef and owner. By the time Kisser opened in 2023, after beginning as pop-ups and a weekly farmers market stand, the cooking had already been tested across exacting kitchens that shaped both polish and instinct.
Formation
Formal training at Orange Coast College gave the early structure before restaurant work supplied the repetition. Brian Lea’s first listed kitchen role, cook at beach-side burger spot, sits close to the fundamentals: timing, appetite, directness, and the daily rhythm of food made for immediate satisfaction. Prep cook at Charlie Palmer added the quieter discipline of accuracy before speed and consistency before recognition. Line work tightened that foundation. As lead line cook at The Bazaar by José Andrés, Lea worked in a setting that required focus, agility, and clean movement under pressure. Pop-ups and a weekly farmers market stand are a practical test of restaurant intent. Kisser began that way in 2021, when Lea and Leina Horii started serving before opening the restaurant in 2023. Before the dining room made the project fixed, the food had to work in temporary conditions: a line, a counter, a market day. In that format, dishes earn return customers by communicating quickly and generously. Japanese-inspired neighborhood cooking is the working frame at Kisser. The restaurant is shaped by Japanese comfort food traditions and the Japanese kissaten, designed as a place for guests to eat, drink, and gather. Its fast-casual, bento-box-centric menu uses bright, bold Japanese flavors without leaning on ceremony for its own sake. The register is casual without being careless, direct without being plain: food built for pleasure, pace, and repeat service. The Chicken Curry Sandwich shows the construction clearly: chicken katsu, Japanese curry, mayonnaise, pickled ginger, scallion, and milk bread. It is also noted for tamari-and-mirin-marinated chicken katsu with a panko crust, plus Japanese curry and a balance of textures, flavors, and umami. The craft is in the assembly as much as the components: crisp katsu against soft milk bread, curry and mayonnaise for richness, pickled ginger and scallion for lift. Strategic Hospitality is also tied to Kisser in Nashville in 2023, the same year the restaurant opened. The current work keeps the hands-on arc visible: professional kitchen training translated into a co-owned restaurant format where craft, pace, and repeatable pleasure carry the weight.
