The Craft

Baylet’s specialty is Bordeaux wines from Entre-Deux-Mers, a range that spans red, white, rosé, clairet, and Syrah. That breadth gives the cellar a wide palette, but his method remains remarkably consistent, almost architectural in its logic: pick at optimum maturity, select by plot, control temperature, protect with inert gas, and move by gravity in the winery. Each step appears designed to preserve freshness, shape, and clarity, letting the wine arrive in bottle with its character intact. Equally important is the work that begins long before fermentation. Reasoned and sustainable practices, aligned with soil life, ecosystem preservation, and plant balance, form the basis of the wines. The style is not about flourish for its own sake, but about keeping every decision connected to the health of the vineyard. The Career

His current role remains winemaker, with the same focus on Bordeaux from Entre-Deux-Mers and the same blend of vineyard discipline and cellar precision. Rather than a trail of changing appointments, his career is concentrated in one place, where the techniques, farming commitments, and range of wines gather into a single, coherent body of work. That concentration lends a sense of continuity: year after year, the same exacting attention turns toward the same essential goal.
