The Climb
School of Visual Arts is the early marker in Cal Peternell’s training, a place where the work of seeing, ordering, and composing would have had real use later in the kitchen. That background sits behind a career that moved from formal study into restaurant labor, with Cal Peternell working as cook at San Francisco restaurant in San Francisco until 1995 before the next stage of service took shape. Chez Panisse in Berkeley became the central proving ground in that progression, where Cal Peternell served as head chef from 2000–2017. The value of that stretch lies in the routine demands of line work and leadership: timing, ingredient care, pace, and the kind of steady control that keeps a kitchen functioning night after night. Cooking by Ear podcast extends that same working knowledge into another format, with Cal Peternell using the microphone instead of the pass while staying within the practical language of food.
Today
FiNNBAR is the current kitchen and co-ownership role for Cal Peternell, a present position shaped by earlier stages in restaurant work and by the discipline of staying close to the craft.
Signature
Twelve Recipes, A Recipe for Cooking, Burnt Toast and Other Disasters, and Almonds, Anchovies, and Pancetta read like a cook’s filing system for a working kitchen: exact where needed, open to error where reality demands it. Under Cal Peternell’s name, the titles point to a practice that values clarity without pretending cooking is ever fully controlled.
In Their Words “Working hard and cooking fast and with precision but without gendered or any other kind of intimidation, humiliation, or harassment.” “I learned so much at Chez Panisse – an intensive education in seasonal produce, of course, but a whole lot more.” The first line sets the terms of kitchen conduct: speed, precision, and no tolerance for intimidation or humiliation. The second places Chez Panisse in Berkeley as more than a line on a résumé, since Cal Peternell names it as a site of broader formation, with seasonal produce as one part of a larger education.
Recognition
The long run as head chef at Chez Panisse in Berkeley remains the main public reference point for Cal Peternell’s restaurant career. From 2000–2017, that post defined how his work was read, and it still anchors his reputation now.
