The Path
Training at Texas Christian University gave Caroline Glover an academic base, but the kitchen work that followed came through service, repetition, and scale. At Chili's in Texas, she started as a to-go worker, where speed and coordination are part of the job. In Greenwich Village, New York City, that progression tightened at The Spotted Pig: first as a line cook, then as Sous Chef. The sequence reads as a steady apprenticeship in restaurant discipline, built through volume, pressure, and time on the line. Farm work in Pennsylvania, Vermont, and Colorado kept that education tied to the ground. Glover’s time as a farmer sits alongside her kitchen roles as part of the same practice: handling ingredients before they become service, and understanding food as labor before it becomes plate work. When she later served as chef at Acorn in Denver, Colorado, that movement between field and stove remained central, with each role adding another practical register to the way she cooks.
