In Their Words “We are using the same scratch methods that Chefs Antonio and Luca use — incorporating Italian and California ingredients, going with a seasonal menu and using techniques that were taught by Chef Antonio.” The emphasis here is on process. Scratch methods, seasonal planning and ingredient discipline are all part of a kitchen culture that values control over shortcuts. Sandoval’s language points to work shaped by method, not ornament. “The general approach was to keep the simplicity and quality of ingredients, which is what Italian cuisine is all about.” Simplicity is doing the heavy lifting in that approach.
