The Ascent
Hospitality training gives dining-room work its operating grammar: service systems, management discipline, and the financial realities behind the table. Christopher Bates built that base at the Cornell School of Hotel Administration, where the study of hospitality management set up the combined restaurant and wine practice that followed.
The Current Work
Finger Lakes hospitality is built on proximity: vineyards, cellars, kitchens, and guests are close enough to inform one another. As chef-owner of FLX Table in Geneva, Christopher Bates works inside that model with a dining format centered on the shared table and direct conversation. “We wanted to bring the social back to the meal,” Bates explains. Restaurant and wine work extend across related formats when the same operator is responsible for both the plate and the glass. Bates’s work beyond FLX Table includes F.L.X. Wienery and Element Winery, placing food service, wine production, and pairing under one professional frame.
Recognition
Sommelier recognition is measured through tasting accuracy, service command, and the ability to communicate wine under pressure. Christopher Bates was honored as Best Young Sommelier in America and then named Best Young Sommelier in the World. He also achieved the title of TopSomm and earned the credential of Master Sommelier. Those honors place the work in a trade context rather than a résumé of decoration: wine knowledge, dining-room execution, and hospitality management operating together from Cornell School of Hotel Administration to the Finger Lakes.
