i. Biography
Cyril Bourbonnois is one of Arnaud Lallement's sous-chefs at L'Assiette Champenoise, the three-Michelin-star family restaurant in Tinqueux, near Reims. He joined in 2001, three months before the restaurant won its first Michelin star, and became Lallement's second de cuisine when it earned its second star in 2005.
