Before Dante Boccuzzi became chef and owner of DANTE in Cleveland, Ohio, in 2010, the work had already been shaped by kitchens that demand speed, precision, and a disciplined palate. The line from training to ownership runs through a set of rooms where standards were high and shortcuts had little room to operate.
The Climb
Dante Boccuzzi trained at Cuyahoga Valley Christian Academy and The Culinary Institute of America before entering a path built through some of the profession’s most exacting kitchens. He worked under Charlie Palmer at Aureole in New York City, New York (1991–1995), then trained under Gary Hollihead and David Cavalier at L’Escargot in London, England (1993–1994). That period of immersion continued at Les Muscadin in Mougins, France, before he worked under Gualtiero Marchesi at L’Albereta in Erbusco, Italy (until 1995), and then worked under Antonello Colonna at Aqua Marina in Sardinia, Italy (1995). By the time he joined the opening team at Lespinasse in Washington, D.C. (1996–1997), the pattern was established: Boccuzzi was building in kitchens where precision mattered and the bench was unforgiving. From there, the résumé widened. He became head chef at Silks at the Mandarin Oriental Hotel, then chef at Armani/Nobu in Italy (2000–2002), before taking on the role of executive chef at Aureole in New York City, New York (2002–2007). Today, Boccuzzi’s work as a restaurateur is as broad as his kitchen background.
