Portugal’s Douro sets the working conditions for Darcio Henriques: slope, river, and local ingredients before composition. The cooking draws on time in Paris, London, and the valley, with fish, seaweed, British heritage, modern European structure, and product-led flavor kept in view. “That seaside vibe heavily influences my cooking style today, with plenty of fish and seaweed making their way onto my menus, inspired by the flavors of Nazare.” Darcio has said.

Technical formation came through Joël Robuchon in Paris and The Lanesborough Hotel in London, where Darcio Henriques worked before returning that precision to Portugal’s Douro as chef at Raiva Restaurant at Octant Douro.
