i. Biography
Early Years
Continuity is a working condition in Burgundy, not a decorative biographical frame. In Denis Bachelet’s case, the record is spare: by 1982, he was in place as winemaker, a role he continues to hold. In a region where small differences in soil, season, cellar rhythm, and handling shape the finished wine, that length of tenure is part of the technical record. A cellar worked over decades gives repeated answers to the same practical questions. The wines attached to Bachelet’s name are read through one place, one village, and one sustained set of decisions: refinement over addition, restraint over display, and a steady preference for site to remain legible.
Making a Name
Grand Cru Charmes-Chambertin is one of the bottlings most closely tied to Bachelet and is counted among his signature works. Its reputation rests on concentration held in check: serious structure, controlled weight, and depth built without excess. Premier Cru Gevrey-Chambertin Les Corbeaux sits in the same register. Both Les Corbeaux and Grand Cru Charmes-Chambertin are sourced from vines dating back to 1907-1917. That specificity matters. The wines are not described through a general claim of old vines, but through plant material tied to a defined span of plantings. Aligoté remains part of the work as well, widening the domaine’s profile beyond Burgundy Pinot Noir. Its inclusion keeps the cellar’s identity from narrowing to a single grape, even as Pinot Noir remains central to the signature. The farming follows organic and biodynamic principles in practical terms: sustainable and organic methods, no herbicides, no chemical fertilizers, no insecticides, and green harvesting. These choices shape the condition of the fruit before it reaches the cellar. The method is defined as much by exclusion and observation as by intervention. Vinification follows a clear sequence: 100% destemming, crushing, pre-fermentation maceration, ambient yeast fermentation, punch-downs and pump-overs, then 15-18 months in barrel. Bottling is done without fining or filtration, and hand bottling remains part of the process. The through-line is control without overworking: extraction, élevage, and bottling handled as connected stages rather than separate gestures.
The Present
Biodynamic practice extends to timing at the domaine, with Bachelet bottling only by the phase of the moon. The detail places calendar, rhythm, and cellar work inside the same discipline. The wines are described as intense, elegant, subtle, concentrated, harmonious, pure, and understated. Those terms point to a craft based on repeated limits: what is not used in the vineyard, what is not added in the cellar, when the wine is bottled, and how long it remains in barrel. The current title remains winemaker, and the span from 1982 onward gives that role its weight. The signature stays narrow and exact: Burgundy Pinot Noir, Aligoté, Charmes-Chambertin, Les Corbeaux, biodynamic timing, and a vinification sequence carried through to hand bottling.
