In Madrid, cocktail work at Salmon Guru is built around high visual impact, fusion structure, and a room designed for energy as much as service. Founded by Diego Cabrera, the bar uses spectacle as part of the drinking format rather than as decoration alone. “Any cocktail made with a Spanish product is something special, whether enjoyed in Tokyo or Bogotá.” Diego has said.
The Route
Hotel bar training, restaurant bar management, and independent ownership mark the progression of Cabrera’s trade work. In Barcelona, Diego Cabrera worked as a bartender at Hotel Arts, then moved into the Bar Manager role at Sergi Arola Gastro in 2008. In Madrid, he opened Le Cabrera in 2010 and ran it until 2013, before establishing Salmon Guru in 2016 as his current platform for high-concept cocktail service.

Contemporary cocktail service at Salmon Guru combines classic references, inventive builds, bold visuals, and a strongly designed room. As owner, Diego Cabrera has made the Madrid bar a recognizable setting for narrative-led drinks and high-energy hospitality, with the neon-lit lounge and unconventional cocktail presentation functioning as part of the overall service language.
