The Path
Esther Ha’s path through pastry and savory kitchens is marked by accumulation: formal study, then successive roles that tightened her timing, judgment, and pace. Pitzer College and the International Culinary Center gave her the technical base; New York kitchens supplied the repetition that turns training into working method. At Gaonnuri in New York, NY, US (2014–2015), the Pastry Cook role put Esther Ha inside the daily discipline of production, where precision is measured plate by plate. Restaurant Fauna (2015) followed as a Culinary Stagiaire stage, a brief period that depends as much on close observation as on output. At Café Boulud in New York, NY, US as Chef de Partie (2015–2017), the work shifted toward consistency and service rhythm, the habits that keep a station reliable night after night. Momofuku Ko in New York, NY, US became the next long run in that same progression: Chef de Partie (2017–2018), Sous Chef (2018–2019), Head Chef (2019–2021), and Executive Chef (2021–2023). The sequence reads as a kitchen education in itself, with each step extending the same core skills rather than replacing them. Today, Esther is Executive Chef of Cabot Citrus Farms (since 2023).
The Work Today

Two dishes carry that approach in concentrated form: the sliced beef course and the Ko Egg. The sliced beef & souffle duo began as a mystery dish on the bar menu before moving to the tasting menu, a shift that shows how Ko builds flavor and recognition gradually. The Ko Egg, a caviar-and-egg combination, sits squarely in the restaurant’s high-low logic, using familiar ingredients and exact placement to make the idea land cleanly. Ha’s own comments stay close to the work itself. “I'd say it's pretty easy to make a plate of it, but hard to make a perfect plate.” On process, she is even more direct: “I think everyone has their own way of breaking down proteins.” And in the plainest terms, she names what experienced kitchen work often comes down to: “I'd say I think I've just found this to be the easiest way and the cleanest and the fastest honestly.”
