Training and Lineage
Professional cooking training starts with repetition before authorship. At Hamilton Polytechnic, Glen File’s grounding was in fundamentals: discipline, technique, and the habits that let a kitchen work cleanly under pressure. Work experience at The Thirsty Bull brought that training into service, where timing, pace, and the practical act of feeding guests well become part of the craft. Kitchen leadership requires a different register: standards held over time, dishes shaped for consistency, and service run with enough clarity that the room can trust the pass. That responsibility came through File’s head chef role at Boulcott St Bistro in Wellington, and later as head chef at Baduzzi in Auckland, where his cooking developed around directness, generosity, and ingredient-led polish. Executive cooking across more than one dining room is a test of consistency as much as range. As Executive Chef of Onslow and Executive Chef of Gilt Brasserie, Glen File works across two Auckland restaurants with a shared emphasis on clarity, balance, and pleasure at the table.
The Work Today
Two current kitchens give the work two expressions. Onslow carries the primary title, while Gilt Brasserie extends the same preference for polish, generosity, and direct cooking. File’s food works from restraint: ingredients are expected to do the labour, with technique providing structure rather than display. File puts it this way: “I try to use quality local ingredients and apply classic techniques to create an ultimately delicious dish. I like to keep things simple on the plate and let the ingredients shine.” That approach is clear in the dishes now associated with him. At Onslow, the chocolate mousse is familiar by name but demanding in execution, relying on texture, temperature, and depth rather than decoration. The eclairs filled with creamy lobster use a recognisable pastry form in a savoury register, holding playfulness inside a classical frame. Across GILT and Onslow, lunchtime schnitzel using Pearl Veal has become a specialty. The dish is direct: crisp exterior, tender centre, and no cover for poor seasoning or uneven cooking. Its value is in clean execution and the confidence to serve something plain-spoken with care. Gilt Brasserie also places File’s work within a wider New Zealand table through a New Zealand-caught pan-seared snapper with braised courgette orzo and lemon butter sauce, created for My Food Bag’s Gourmet Edit menu. The composition follows his stated method: local produce, classic technique, and flavour before flourish. Snapper, courgette orzo, and lemon butter sauce are handled as a complete plate rather than as ornamented parts. The through-line is not a trick or a single visual signature. File’s cooking favours polish without fuss, generosity without excess, and technique used for deliciousness. At Onslow and Gilt Brasserie, restraint is treated as a working discipline.
Signature
Classic desserts leave little room for weak fundamentals. Rum baba and Chocolate mousse at Onslow are signature dishes associated with File because they depend on execution rather than novelty. Rum baba asks for generosity held in balance; Chocolate mousse asks for texture, depth, and restraint. Both sit in a tradition of enduring forms made complete through careful technique.
