i. Biography
Jauca Catalin has been Executive Chef at The Bath Priory in Bath, United Kingdom, since 2020, where the work is built around fresh local produce, flavour and balance. Born in Bucharest, he brings that same practical discipline to the kitchen, shaped first in a domestic setting where his mother cooked with clear intent and regularity. Jauca Catalin describes that early training plainly: "My mother was very passionate about cooking. I grew up helping her in the kitchen, learning skills and becoming passionate." The emphasis has stayed on repeatable fundamentals: restraint, timing and respect for ingredients handled well.
The Path
Jauca Catalin trained at cookery school before taking a first position at a 4-star hotel in Bucharest, a starting point that established the pace and expectations of his work. From there, The Bath Priory in Bath became part of his formation, first as Demi Chef de Partie and later as Junior Sous Chef, with the service rhythm of the house shaping his hands-on experience. He then moved on to Sous Chef at ABode Chester, before becoming Executive Head Chef at ABode Canterbury (2014–2020), a progression marked by steadily greater responsibility. Since 2020, Jauca Catalin has served as Executive Head Chef at The Bath Priory in Bath, returning to a house that had already formed part of his earlier development. The route is orderly rather than dramatic: each kitchen added another layer of discipline, and each role sharpened the terms on which he cooks.
The Work Today
At The Bath Priory in Bath, Jauca Catalin's cooking is defined by the house line of fresh local produce, flavour and balance. He frames the work in service terms: "The opportunity for being creative, the adrenaline and buzz that each service gives." That is the register of a chef working to the demands of the pass, where creativity has to be delivered under pressure and with precision.
Signature
Jauca Catalin's signature dishes include Cornish crab served with confit lime, mooli and peanut chilli caramel, a plate built around contrast in sweetness, and spice and salinity. He also creates banana cake with hazelnut praline, white chocolate and manuka honey, a dessert with richness set against measured detail, and Fresh white crab meat, lime confit, mooli and peanut chilli caramel, which restates his interest in balance. Another signature, Valrhona Dark Gianduja Hazelnut - Butterscotch & Passion Fruit Center, brings depth and brightness into the same frame.
