i. Biography
Chef and owner of BARDA in Detroit since 2021, Javier Bardauil has built a career that moves between Argentine kitchen discipline and Paris-trained technique. Born in Buenos Aires, he brought that training to Detroit and gave BARDA a clear point of view, one that drew national notice quickly enough to become a James Beard Award finalist for Best New Restaurant in 2022.
Coming Up
At the Argentine Gastronomy Institute, the work began with rigor and repetition; at Lenôtre School in Paris, the same foundation met a sharper emphasis on precision. Javier Bardauil’s early training gave him the tools that matter most in a kitchen: structure, control, and the ability to carry a style without overreaching. In Buenos Aires, he served as Culinary Director at Happening, a role that moved him from training into leadership. That position placed kitchen authority and point of view in the same hands, and it marked a clear stage in a career that was already moving beyond preparation and into authorship. Today, Javier is chef/owner of Barda (since 2021) and chef/owner of Puma. The two kitchens show the range of his current practice without changing the basic terms of it: build a restaurant, hold a standard, and let the work speak in more than one register.
Where They Are Now
Since 2021, Bardauil has served as chef/owner of BARDA in Detroit, United States, where the restaurant sits at the center of his public identity. In that role, he is responsible for both the kitchen’s direction and the operation around it, and BARDA’s early momentum carried quickly into national recognition when it became a 2022 James Beard Award finalist for Best New Restaurant. In 2024, he opened PUMA in Detroit and serves as its chef/owner. The concept is contemporary Latin cuisine shaped by food, music, art, and creative exchange, which broadens the frame without moving away from the fundamentals of the dining room. It keeps the emphasis on cooking, while allowing the room to carry more cultural range. Together, the two restaurants mark the Detroit phase of his career: one established in 2021, the other added in 2024. Both are run by the same chef/owner, and both reflect a background that runs from Buenos Aires through Paris and into Detroit.
Signature
Javier’s signature dishes include pork tomahawk with coriander crust, pear, red cabbage, Argentinian-style grilled beef short ribs, and burnt Alaska with chocolate semifreddo. Together, they show a kitchen working across richness, fire, and finish: one plate built on contrast, one on grilling tradition, and one on dessert as a composed ending.
Honors
Javier’s honors include James Beard Award semifinalist, Best Chef: Great Lakes (2025) and James Beard Award finalist, Best New Restaurant (2022). Taken together, those recognitions show both regional standing and the early national response to BARDA’s opening run.
