i. Biography
Open-flame cooking, seafood handling, small-plate pacing and front-of-house control define the current work: Jean Claude Roge is co-owner and operator of LYNQ in Fort Myers, while also owner and chef at Blanc. The restaurants use heat, aroma, texture and timing as operating tools, with plates built across cultures without losing the discipline of focus.
The Making
Restaurant ownership across sushi, chef-driven small plates and full-service operation sets the frame here: Today, Jean Claude Roge is the owner of Blu Sushi, chef-owner of Blanc, and co-owner of LYNQ since 2017. The range each format asks for a different kind of control, from product discipline to menu rhythm to the broader mechanics of hospitality. Sushi, small plates and open-kitchen dining each bring their own standards to the work. Blu Sushi carries Japanese influence and the clean discipline required around seafood. Blanc works in a more intimate register, with global reference points and a room built for close contact between guest and kitchen. LYNQ, in Fort Myers, extends the job beyond cooking into operation, service and the full cadence of the dining room. Tasting remains part of the method, not a backstory. “We’d go to five, six, seven restaurants in one day and they were all really, really good.” In practice, that kind of repetition trains attention: keep tasting, keep watching, keep measuring what works. The operating instinct is still active in Roge’s own words: “Every day I’m thinking of stuff, always looking for the next step.”
The Work Today
The cooking at Blanc draws from French and Asian influences, American classics, a Japanese robata grill, sweet heat, citrus, ginger and basil, with a chef’s counter placed at the center of the action. That setup changes the craft demand: timing, fire, plating and service are visible, and the guest sits close enough to read the work as it happens. Robata grilling gives the octopus dish its structure: octopus grilled on the Japanese robata grill and served with sweet habanero sauce. The plate depends on contrast already built into the description—smoke, tenderness, char, sweetness and heat held in balance. The Asian sea bass topped with jumbo shrimp works differently, finished with lime, ginger and basil coulis over spinach and sun-dried tomato risotto, layering richness with acidity and aromatics. Hospitality at Blanc is handled through pacing, attention and proximity as much as through the plate. The format brings together small plates, global inspiration and theatrical hospitality, allowing the meal to move as a sequence of tastes, textures and timed exchanges between kitchen and room.
