Wine can train a cook before the stove does: regions, labels, cellars, service ritual, and the discipline of tasting with attention. In Jeff Galvin’s case, the first ambition was sommelier work, but age and licensing rules redirected him into a catering school course split between wine study and cooking. The useful fact for the trade is not the detour; it is the early pairing of palate, service and kitchen method. The Climb

Jeff Galvin’s early work as a pot-washer at Anthony Worrall Thompson put him close to the pace, heat and order of service before the titles arrived. That kind of start teaches the trade from the back end: what fails, what piles up, and how a kitchen depends on timing before it depends on reputation. Classical hotel and dining-room progression supplied the next layer of method. As commis chef at Savoy Hotel in London, then junior sous chef at Capital Hotel, then sous chef at Chez Nico in Park Lane, London (from 1994), Galvin moved through kitchens where hierarchy, polish and consistency were part of the daily standard. The craft lesson is cumulative: technique is only useful when it can be repeated under pressure. Opening a restaurant tests a different muscle from working inside an established one. In 1997, Galvin worked on the opening of the restaurant at Orrery in Marylebone, London (from 1997). By 2000, he was head chef at L'Escargot (2000–2005), carrying responsibility for the kitchen’s output, consistency and identity. Co-founding Café à Vin in City of London (from 2009) extended that responsibility into the authorship of a place, not just a menu. The Galvin restaurant group records a sustained build rather than a single break. Current kitchen work across Galvin Restaurants remains close to production. As chef patron, Galvin advises on menus and creates dishes in the Galvin restaurant kitchens. A menu is not finished when it is written; it has to survive purchasing, prep, service pace, guest response and the small variations that only a working kitchen exposes. The London openings show a consistent restaurant grammar built around French cooking and hospitality rather than novelty for its own sake. Galvin Bistrot de Luxe opened in London in 2005 with Chris Galvin. Galvin at Windows opened in 2006 and gained a Michelin star. Galvin La Chapelle opened in London in 2009 and also gained a Michelin star. The through-line is the full restaurant: food, wine, room and service carrying equal weight. Expansion beyond London kept the same frame in a different city. The Pompadour by Galvin opened in Edinburgh in 2012, and Galvin Brasserie de Luxe opened in Edinburgh’s Waldorf Astoria in 2012. “It’s probably strange for a chef, but service is often the number one thing I notice when I go to a restaurant, sometimes more than the food!” Jeff has said.
Recognition
Jeff Galvin has received Catey Award, Independent Restaurateur of the Year (2010). Recognition across Michelin star (2011), Michelin Bib Gourmand (2011), Michelin star (2010), Best Wine List (2009), and Best French Restaurant points to more than plate work alone.
