In Morey-Saint-Denis, Whole-cluster Pinot Noir is part of the working grammar at Domaine Dujac, used for aromatic lift and texture rather than as decoration. Jeremy Seysses, co-owner and winemaker, works within that Burgundy frame with fruit grown under an approach that includes organic and biodynamic viticulture.

Jeremy Seysses trained at Robert Mondavi winery and University of Burgundy, pairing a Domaine Dujac family context with exposure to Californian scale and university study in Burgundy. Since 1998, his work as vintner and as part of the Seysses family management running the domaine has kept the Morey-Saint-Denis house centered on its own fruit, cellar choices, and farming direction. From 2018, Jeremy Seysses worked in California, United States, as a consultant at Flowers and other California projects. Cabernet outside the usual Cabernet circle was the point of the new collaboration. As Jeremy Seysses put it: “But then Carlton said, ‘No, I want to do Cabernet with people who don’t normally do Cabernet.’ And I thought that was interesting."
