Born in Großröhrsdorf, Saxony, the cooking at Genuss-Atelier is built around regional cuisine with European influences: seasonal work, direct construction, good products, precise craft and a clear signature, with Marcus Blonkowski’s Saxon grounding present in the restaurant’s address and point of view.
Career Arc
Formal training at Hoga Schloss Albrechtsberg gave the craft its base before service in high-altitude hospitality at Mountain VIP Lounge in Ischgl, where Marcus Blonkowski worked as chef until 2011. The next stage, as deputy sous-chef at Silvio Nickol Gourmet Restaurant in Vienna until 2014, added precision, hierarchy and leadership inside a disciplined kitchen structure. Since 2014, the work has been concentrated at Genuss-Atelier, where Marcus Blonkowski is founder / Executive Chef and has turned that experience into a personal restaurant language in Dresden.
