Since 2018, Brace in Copenhagen has been shaped by Nicola Fanetti in the dual role of chef and co-founder. Born in Brescia, Italy, in 1989, he moved from formal training into ownership and the pass, keeping both sides of the work inside the same operation. His advice is plain: "The only advice that I would like to give is to believe in yourself, trust yourself, fight and make sacrifices."
