    i. Biography

    The Path

Osamu Fujita moved through Hyatt Regency in the United States as Corporate Executive Japanese Chef, then Marssa Restaurant in Las Vegas as Executive Chef, and later Loews Hotels as Corporate Sushi Chef, building a record shaped by repetition, standards, and service at scale. From 2013–2025, Nozawa Bar in Beverly Hills, California became the clearest public measure of that work. As Executive Chef there, Fujita held a long run at a Los Angeles address where omakase sushi set the terms of the kitchen.
