i. Biography
Entry into Domaine Robert Arnoux in 1987 came through both family and bench work: after marrying Florence Arnoux, one of Robert and Clotilde Arnoux’s three daughters, Pascal Lachaux began learning beside Robert Arnoux and joined the Burgundian line by marriage, apprenticeship, and daily practice.
Training and Lineage
A dual formation shaped the work early: pharmacy specializing in homeopathy on one side, apprenticeship at Domaine Robert Arnoux on the other. In Pascal Lachaux’s case, scientific discipline and cellar repetition developed together, giving the later wines a foundation in precision as well as manual craft.
The Work Today
Old-vine fruit sat at the center of the method, with quality, consistency, finesse, concentration, and fidelity to terroir as the working targets. Yield control was treated as a primary vineyard tool. Under Pascal Lachaux, pruning reduced production to 9 bunches per vine in Bourgogne vineyards, 7–8 bunches for village appellation, and 6 bunches for Premier Cru and Grand Cru parcels. Cellar practice followed a clear extraction and élevage logic: full destemming, 4–8 days of cold maceration, and natural yeasts. Oak use rose by classification, with 20–25% new oak for village wines, 50% for premier-level bottlings, and 100% for the top grand-tier wines as well as Suchots and Reignots. Fruit preservation also shaped vessel choice. Some 500-liter casks were used on village and regional wines to reduce overt oak flavors. The technical pattern was consistent: concentration and finesse, with terroir kept in view rather than covered by cellar signature.
