The Path
At University of Reims Champagne-Ardenne, Pauline Lhote built the academic base for a career that moved through Nicolas Feuillatte and Moët & Chandon in France before she entered Domaine Chandon in 2006 as an intern in Napa, California. She then moved into full-time work in winemaking operations at Domaine Chandon in Yountville, California, where the cellar side of sparkling production became her daily practice.
