The Path
Marchesi’s line of Italian kitchen discipline runs through Salvatore Bianco’s early formation: training under Gualtiero Marchesi at Relais L’Albereta in Franciacorta, Italy, followed by sous-chef work for Gualtiero Marchesi at Osteria dell’Orso in Rome, Italy. The later Naples chapter placed that discipline inside hotel-scale operations, with Bianco overseeing culinary direction at Romeo Hotel in Naples, Italy (until 2024), while also leading the kitchen at Il Comandante at Romeo Hotel in Naples, Italy (until 2024). Hotel cooking at this level depends on range as much as authorship. Today, Salvatore is executive chef overseeing the hotel’s culinary offering, including La Terrazza, Il Giardino Ristorante, La Libreria, events spaces and in-room dining of Hotel Eden, Dorchester Collection (since 2024).
