At University of Central Florida, Sean “Sonny” Nguyen built the early discipline that later carried into service and management. From 2007–2009, he worked as a restaurant worker at Bento Asian Kitchen in Gainesville, Florida, where the pace of the floor and the demands of service set the terms of the job. In 2009, that experience expanded into a broader operational role when he became executive project manager at Bento Group in Orlando, Florida (from 2009). The progression maps a steady rise through the trade, with attention not just to plate-level work but to how a restaurant holds together. Since 2016, Sean has been chef/owner of DOMU, and the restaurant reflects that same measured approach.
